Pumpkin Chocolate Chip Cookies

We enjoy pumpkin related desserts year round but especially in the fall when it seems pumpkins and apples are begging for attention.
These pumpkin cookies have been making a regular appearances with several batches being made each week. We enjoy them that much!

Pumpkin Chocolate Chip Cookies

1 cup butter flavored Crisco
3 cups sugar
2 eggs
2 cups pumpkin
5cups flour
2 tsp baking powder
2 tsp baking soda
1 tsp salt
1 tsp nutmeg
pinch of cinnamon
2 cups chocolate chips

In a large bowl combine Crisco and sugar. Add eggs one at a time beating well after each addition. Add pumpkin. Mix. Add remaining dry ingredients (except chocolate chips) and mix well. Fold in chocolate chips. Drop by spoonful on cookie sheet that has been lined with parchment paper. Bake on middle rack in a preheated 350 oven for 15 minutes. Remove from oven and allow to cool for one minute before removing from cookie sheet.

These are delicious with or without the chocolate chips.

  5. i would like to try that, but what do you do with the pumkin, use it raw or boiled? grate it or cut it in cubes? i am not used to pumkin, they don't grow in iceland. it is to cold.
    and one more question, crisco is a butter-substitude?

  6. As much as I'd like to try this recipe out I have to ask you the same questions: What is Crisco and do I have to cook the pumpkin first? Here in Switzerland there's no such thing like canned pumpkin (not that I would use them and I presume you don't either; I basically cook everything "from scratch") to get a taste and a sample of how it should look...

  7. Alis...Crisco is a processed form of lard, if you have it there. Pumpkin is of the squash family and needs cooked to a puree before it can be used in recipes. I too live in another country and at times need to adapt. I have a form of Crisco but it is costly here, and nearly gone, so I used it with some soft margarine today to make my pie crust!
