Oatmeal Cake

Yesterday Rosebud was wanting to try baking something all by herself. We haven't had dessert for quite a while already so I sat down with her and helped her choose a recipe that I thought she would be able to handle by herself. And other than having me take care of measuring the boiling water she did everything else on her own.

The cake is delicious and she is very pleased!
Oatmeal Cake

1¼ cup boiling water
1 cup oatmeal
½ cup butter
1 cup brown sugar
1 cup white sugar
2 eggs
1½ cup flour
1 tsp nutmeg
1 tsp cinnamon
1 tsp baking soda
½ tsp salt
1 tsp vanilla

Measure oatmeal into a small bowl and pour boiling water over it. Set aside. In large mixing bowl combine softened butter and sugars. Mix well and add eggs one at a time mixing very well after each one. Blend in oatmeal mixture and vanilla. Add flour, baking soda and spices. Pour into greased and floured 9x13 cake pan. Bake at 350º for 30-35 minutes.

While cake is baking mix the following topping:
2/3 cup brown sugar
1 cup coconut
6 Tbsp melted butter
¼ cup cream
1 tsp vanilla

Combine and set aside until cake is done baking. Pour on top of cake and spread until nicely even. Pop cake back into oven for an additional two minutes.

Let cool and enjoy!

  6. So I'm wondering if leftover oatmeal could be used..since the oatmeal in the recipe is softened anyway. I'm always in a quandry about what to do with the left over oatmeal as my children are not huge on oatmeal in the first place and I've no chickens right now to feed the left over oatmeal to.

    It looks like a yummy, spicey recipe. I think I'll have Livia try her hand at it this weekend. Thanks MA!

    I have a recipe that is very similar to yours that is about 50 years old. It's very tasty, too.

  16. Way to go Rosy!! My daughter made snickerdoodles by herself last night... the first time ever making anything by herself. She did a pretty good job and even cleaned up her own mess. Don't you just love seeing them grow up and be so independent? Well, it's sad too though that they are growing up so fast!

  18. Thank you for the recipe. What kind of coconut product you use in it? Here in Finland (Europe) they sell small fine coconut flakes (and coconut butter and coconut milk or cream as well), I'm wondering if that can be used in the cake.
