Pudding Cups

As part of our family's New Year resolutions we have been trying a new recipe every day in the month of January. So far all but one have been a winner. We don't have dessert often, but yesterday being so cold it seemed like the perfect time to spend a little extra time in the kitchen to create a treat to enjoy after dinner.

 

 
To make these I used one 12 oz. package of dark chocolate chips and melted them in the top of the double boiler. (A microwave would work too if you prefer that method)
 
After they were melted I brushed the chocolate on the inside of foil muffin cup liners and placed them in the refrigerator for half an hour. When they were firm I carefully tore the foil off and filled the chocolate cups with a vanilla pudding. Any type of pudding or even ice cream would work.
 
After placing several slices of strawberries on top they were ready to serve. I kept them in the refrigerator until we were ready to eat them since the chocolate tends to soften at room temperature.

  1. What I cute idea! I never would have thought to coat a muffin cup liner! Does is have to be tin, do you think it would work on paper liners? What a fancy way to make a simple dessert! Thanks for sharing!

  2. Emily, paper muffin liners would tend to stick to the chocolate a lot more and be difficult to remove. Also they aren't nearly as strong and don't hold their shape as well.

    Foil liners are recommended for the best results.

  4. Those look delicious! What a fun thing to do in the new year. I know I tend to get stuck in "a rut" making the same things all the time.
