There are many things I enjoy doing, and one of them is trying out and creating new recipes. I was looking for something relatively easy tonight for supper, and threw this creation together. It was a big hit with the rest of the family so I jotted down how I made it but I haven't had time to think of something intelligent to call it. So if you have any ideas I would love to hear them.
In a cast iron skillet over medium heat combine:
2 tablespoon vegetable oil
1½ cup rice
½ tsp. black pepper
1 tsp salt
Stir to evenly coat rice with oil and add
3 cups water
Cover and turn heat down and slowly simmer for approximately fifteen minutes or until water is absorbed.
In the meantime in another skillet combine:
2 lbs ground beef
1 medium onion (diced finely)
¾ tsp black pepper
1½ tsp salt
Stir over high heat until evenly brown.
In a 15 x 10 pan spread the cooked rice in bottom. Spread meat over it, and add:
1 can Ragú Six Cheese pasta sauce (1lb 10 oz)
2 cups shredded cheddar cheese
Bake uncovered in a 350º oven until cheese is melted.
Serve with an optional dollop of sour cream on top.
A garden salad is excellent to serve with this casserole to complete your meal.

ReplyDeleteHmmm, I like the one above "spaghetti rice" because of the Ragu. That sounds just like something my family would eat! I don't have a cast iron skillet if you can believe it but I grew up with one. I wonder if my mom still has it? Thanks for sharing that ~ I always love new recipes. ♥
ReplyDeleteSounds good. Similar to one I make that my mom used to make called company casserole. My husband does not eat casseroles. So when I make one I make him a hamburger steak and I either have my daughter and her family over or I divide it into two dishes one serving size for me and rest in casserole dish for daughter so she has an easy meal just to heat up when she gets home from work one evening for their supper. Hers calls for tomato sauce but I use bottled spaghetti sauce...hers has cream cheese and cottage cheese but I use ricotta and egg noodles.

"Cheeseburger Surprise." The rice being the surprise. I like the idea that it is made in a skillet. I have loved mine since 1955, and loved mothers before that.
And your casserole being covered in that gorgeous melted cheese, no one but you knows what's under it. What a nice surprise!
I'm going to have to try making it soon!

ReplyDeleteThinking outside the box can make for a great dinner. I try doing that every once in a while, just trying to get rid of random ingredients. It looks really yummy and so easy. Can't beat that! You could call it This And That, cause it has a little bit of this and a little bit of that.

ReplyDeleteWe do something close but use homemade enchilada sauce. I do top it with a little cheese - just enough to see and taste it. This is a good dish to make when you have leftover rice and cooked ground beef already in the freezer. (I like to pre-cook ground beef and store in freezer bags so it's ready when I am.)
I'll have to spend some time looking around; I'm new here.
