My husbands favorite dessert is pie. He doesn't care what kind I make as long as it doesn't contain any rhubarb. For some reason none of our family is fond of rhubarb and we have been known to turn down dinner invitations during rhubarb season to avoid the dreaded stuff. We have been offered to try it in cobblers, various pies, puddings, and almost everything else imaginable, by eager cooks convinced if we would only try their delectable creation we would lose our aversion to rhubarb. Unfortunately it only rooted it more deeply.
We always heave a sigh of relief when rhubarb season is over and we can once again mingle safely with friends and neighbors.
One of the pie I often turn to when I'm baking is our favorite Pecan Pie. I often substitute the pecans for oatmeal, or an oatmeal and coconut mixture, for something different.
Pecan Pie
2 eggs beaten
1/4 tsp salt
1/2 cup sugar
1 cup corn syrup
1 Tbsp flour
1 cup milk
1 tsp vanilla
2 Tbsp melted butter
1 cup chopped pecans
Mix all together and pour into an unbaked pie shell. Bake at 350 for 45 minutes.
The pie in the picture I substituted the nuts for 1/2 cup oatmeal and 1/2 cup coconut.

I have an aversion to rhubarb, as well. That is so funny how you will turn down invites. Could you offer to bring dessert? I need to learn when raspberry season is. UGH! But then so many buy them in the stores any more...

ReplyDeleteYUMMMMMM - so you take OUT the pecans and use oatmeal and coconut instead sometimes, so there aren't pecans in there? I haven't had supper yet so I feel like going and making one now - then eating it...alone!
ReplyDeleteOur neighbor pressed a rhubarb pie upon us recently. I'd never eaten it, and once tried, I'll never eat it again. Pecan pie is another story. I love it, and make it for all holidays. Your pie and recipe looks delicious.

Ya know, I have never had pecan pie. EVER! I should give it a try. And I'm with you there on the rhubarb. YUCK! I learned to not like it in my 4-H cooking class when I was 8 years old. I'll never forget it. And I'll never eat it again.

I do like a good rhubarb pie,and a good pecan pie. Never heard of pecans being replaced with oatmeal and coconut, I will have to try that after the season of making fruit pies.

I too have a rhubarb pucker. I remember my father making me a delicious meal of Lemon fish, rice, salad and the thing he was most excited about was the rhubarb lemon pie I had never tasted before...If you haven't guessed he likes all things sour...((my mother was away visiting her mother at the time..I think I was about 15 and my other brothers and sisters where at work,out of the house or just some other place)). It was just us...me and my dad and the PIE...
I should blog about it....my cheeks hurt to this day when I think of it. We had a beautiful table, a lovely dinner and then "the PIE...

Pecan pie is one of my husband's favorites (mine too). Although I don't make it that often because our son is allergic to nuts. (Boo!)

ReplyDeleteWell, I hate to admit it, but I adore rhubard pie! My husband makes a cobbler with rhubarb, raisins, honey, melted butter, and whole wheat bread, then sprinkles it with a bit of coconut and some cinnamon. Honestly, it is heavenly.
ReplyDeleteWhen I make pecan pie, I brown the pecans for a few minutes in the butter, and substitute maple syrup for the Karo. My sister (whom we called Lucretia - but not to her face!) didn't like pecans, so she made her pies with walnuts. Now, there's a ghastly dish for you! Ack!
