Even though we had a large garden every year while I was growing up, for some reason we never planted zucchini.
It wasn't until the year I was 18 that I was first introduced to them.
An elderly woman had passed away in our community and I was supposed to go help with all the food preparations for the meal following the funeral. It involved baking close to a hundred pie.
The woman's daughter-in-law wanted us to make zucchini pie. She dug out a handwritten recipe from her collection in one of her sink drawers, and we got to work. It seemed to take a long time to get all the zucchini peeled, and then grated.
We poured vinegar, brown sugar, and cinnamon over it and spooned it into pie shells. I looked forward to tasting the finished product and was pleasantly surprised to find that it tasted just like an apple pie.
After I got married I liked raising zucchini. It has become a favorite for our family, fixed in a wide variety of ways, including mock apple pie.
You are really going to have to post that recipe, you know.
ReplyDeleteFor a long time, I had an allergy to shellfish, which I have (thank Heaven!) outgrown, so I grated and drained zucchini and then used it as a substitute when I made crab cakes. Old Bay, celery, bread crumbs and mayo, and they were REALLY good. Plus, when crab meat costs an arm and a leg and your firstborn child, they are very economical, especially in the summer, when people practically give away the veggie.
Your zucchini cakes sound delicious! I'll have to try my hand at making them sometime.

I love zucchini and use it in lots of baking. I grate and freeze it in two cup portions which is just about right for most recipes and we then enjoy it all year round.

DeleteZucchini is something my husband had great success in growing. One the size of our grandson when he was born. We took a pic of him holding Brady in one arm and the zucchini in the other! I made loads of muffins, cakes, roasted zucchini, and everything I could think of. Zucchini chelate cake is delicious.

ReplyDeleteIt seems to be something that's easy to grow, and can be found in lots of gardens, even those who don't grow a lot of things.
DeleteHave you ever tried making zucchini boats? It's where you slice them in half, the long way, and remove the seeds. Fill the hollowed part with a meat and cheese mixture and bake. So good!

Many dates later he admitted zucchini was too "squashy" for him. I have never seen him eat any zucchini in any form again. It must have been true love to eat the whole slice. :)

I actually used to hate zucchini when I was kid but once I cooked it to my liking I love it. These sound so good. I may have to make these. Congrats on finishing the a-z challenge. :) Have a wonderful Weekend.

DeleteGrowing up, Daddy only ever raised crook necked yellow squash. One year after we were married, Pete brought home zucchini and the white squash as well. They are all good. Yellow is probably still my favorite but the zucchini is a close second. Congrats on completing the AtoZ!
